Tempeh Tomato Cheez Fajitas

1 tsp olive oil

4 slices of tempeh (1/2 package) chopped into 1-inch pieces

2 corn tortillas

1/4 cup Daiya (or other non-dairy) cheese

3 Campari tomatoes

1/4 cup onion, sliced

1/4 cup cilantro, chopped

1/4 tsp salt

1/4 tsp black pepper

1/4 tsp chili powder or habanero spice blend (optional)


Heat oil in frying pan on low-medium heat. Add onion and cook a few minutes until it begins to be translucent. Add tempeh and cook for a few more minutes at medium heat. Add salt, pepper, and chili powder if using. Add tomatoes and cilantro and cook for a couple more minutes stirring and combining well. Serve with warmed tortillas and salsa, pico de gallo, or guacamole if you like!
