Spicy Ginger Salad

You can make your own sauerkraut (it's so easy!) or purchase ready-made at the supermarket.

2 inches of chopped fresh ginger

1 garlic clove, chopped

1 habanero pepper, chopped

1 tbsp coconut oil

1 tbsp honey

1 tsp sesame seeds

salt & pepper to taste

1 cup chopped cucumber

1/4 cup sauerkraut


Heat oil in pan or pot on medium heat and add garlic, habanero and ginger. Turn heat down to medium-low. Caramelize - cook occasionally, stirring, for up to 15 minutes. Add honey and mix in well. Take off heat. Add cucumber and sauerkraut to a bowl. Cover with sauce from pan, plus salt and pepper if desired. Mix well, top with sesame seeds, and serve immediately.
