Spicy Asparagus Macaroni

1 cup gluten-free macaroni or other pasta

5 stalks of asparagus, chopped in 1-inch pieces

1 plum tomato

2 garlic cloves, chopped

1 scallion, chopped

handful of fresh chopped cilantro

1 tsp habanero blend spice (or your choice, spices like oregano, basil, parsley are a few options)

2 tsp nutritional yeast

1 tsp ground flaxseeds 

1/2 tsp Himalayan pink salt

pinch of black pepper if desired


Cook pasta according to directions. Meanwhile, in a frying pan, cook the asparagus in about an inch of water with salt until the water begins to evaporate and then add scallions and garlic. Cook for a few more minutes and the water should be almost gone. Add tomatoes, cilantro, and spices. When the pasta is ready, strain the water out of it and then stir the pasta into the frying pan mixture. Add nutritional yeast, ground flaxseeds, and black pepper if desired. Combine well and serve!
