Ras el Hanout Pasta & Mushrooms

1/2 teaspoon olive oil

1/2 large red onion, chopped

1 cup mushrooms, chopped

1 cup fresh cilantro, chopped

2 cups fresh broccoli, chopped

1 tablespoon ras el hanout

1 cup pasta sauce

4 ounces rice pasta

2 tablespoons cashew parmesan

salt & pepper to taste (optional, preferably 1/2 teaspoon or less salt)

hot sauce to taste (optional)


Heat olive oil on medium-low in a medium skillet. Add chopped onions, stirring occasionally. Boil water in a medium pot for rice pasta. Cook pasta according to package directions when ready, meanwhile continue with the stir-fry. When onions begin to turn translucent, add broccoli, mushrooms, ras el hanout, and salt and pepper (if using). Cook for a couple more minutes. Add cilantro and sauce to the skillet. Once heated through, remove from heat and serve sauce and vegetables over pasta. Add cashew parmesan and hot sauce if desired.
