First, remove the pits from and soak 10 medjool dates in hot water for at least 5 minutes.

10 medjool dates, pits removed & soaked in hot water 5 minutes

1 cup almonds

2 tbsp flaxseeds

1/4 tsp pink Himalayan salt

2 tbsp pumpkin seeds

1/4 cup coconut flakes

1 tbsp coconut oil, melted

1/2 tsp cardamom seeds or powder


Use Vitamix or other blender or food processor to slowly blend all ingredients together, on low-medium speed, pressing down very carefully with a spoon or other tool (be sure not to touch the blade). Once well blended, press them into a pan or Tupperware container. I used a 4-cup Tupperware, about 5" x 9 1/4". Chill in refrigerator for at least two hours, cut to your desired size and enjoy! These are an excellent granola bar alternative.
