Make sure you get gluten-free oats if you are eating gluten-free!
5 minutes (or 30 minutes for steel cut oats)
1/2 cup oats (or 1/4 cup steel cut oats)
1 cup water (or 1 1/2 cups water for steel cut oats)
1/4 tsp cinnamon
1/4 tsp ginger
1/4 tsp cardamom
1 tsp maca
1 tsp hemp seeds
1 tsp pumpkin seeds
1 tbsp almond butter
1/2 cup fresh or frozen blueberries
1 tsp coconut butter (optional)
Add oats, water, spices and maca to a small pot. Bring to a boil, stir, then reduce heat to simmer. Steel cut oats take approximately 30 minutes but you can prepare them ahead of time by boiling in water then turning off the heat.* When ready to your desired consistency, put in a bowl and stir in a spoonful of nut butter. You can use that spoon to eat the oatmeal! Top with seeds, blueberries and coconut butter, if using. You can get creative with this using different fruits, spices or nut butters as you choose.
*Prepare steel cut oats in advance, the night before or in the morning - then you can go do something else like get ready for work while they're soaking in hot water - just come back when you're ready, add the other ingredients and heat everything together.
