To prepare the kale, wash and chop it first, put it in a bowl and squeeze the juice of 1/2 a lemon over it. Then massage the kale with your hands for a couple of minutes until the color changes and it releases some juice. This makes the kale more easily digestible.
2 cups of fresh chopped massaged kale
1 avocado, cut into small pieces
1 tbsp pumpkin seeds
2 tsp nutritional yeast
1 tsp pink Himalayan salt (optional)
Choose three or more of the following:
1/2 cup of chopped tomatoes
1/2 cup of sliced cucumbers
1/2 cup of chopped bell peppers
1/2 cup of chopped broccoli
1/2 cup of chopped cooked asparagus
1/2 cup of chopped carrots
1/2 cup of sugar snap peas
Add all ingredients to a large bowl and combine well. Serve immediately with lemon tahini or other dairy-free dressing.
